I sprayed my pan well, waited for the cake to cool, and used an offset spatula to loosen the edges.  Even though I did everything right, the cake still stuck in a few places and it created some bare spots.

When I took this cake out of the pan and saw where it stuck, my immediate thought was that I couldn’t put it on my blog because it wasn’t perfect. Knowing I was running short on time (and not wanting to bake another cake), I considered just editing the photos and using some tricks to make the bare spots disappear.

Then I remembered the lecture I give the students in my baking classes…

I always talk about how I hate perfect baked goods.

When I was 4 years old, I went through a phase where I only wanted to wear clothes with fruit on them. My mom searched far and wide and came up with several fruit outfits — t-shirts, shorts, jumpers and even a few pairs of pajamas — all featuring strawberries, cherries, pineapple, watermelon, and other fruit designs. It’s pretty impressive that my mom was able to find all of that considering this was before the days of online shopping. I’m not sure what brought this phase on but apparently I really loved fruit at the time and wanted to show my pride through my sartorial choices.

My weird fruit clothing obsession has passed but my love for fruit hasn’t. Unfortunately, it seems I am always disappointed when I come across fruit salad. It always looks so beautiful but the taste never matches up to the presentation. It’s usually cloyingly sweet with a sugary sauce or bland and boring with nothing to bring the fruit together.

I have fall and the holidays on my mind and I wanted to come up with a fruit salad that could hold its own on the holiday brunch table. I decided to turn to fall spices to create a simple syrup to bring all of the fresh fruit together. I must admit that I was at a bit of a loss on this recipe until I called my mom for help. Her suggestion of a little bit of fresh ginger and pure vanilla extract did the trick.

In this ginger vanilla fruit salad, the syrup adds flavor and personality to the salad but still lets the fruit shine. It has the warm, spicy taste of fall and the bright, festive flavors of the holidays.

Retro Pecan Sticky Buns

I like the idea of freshly baked sticky buns on a cold, snowy weekend morning.  But, I like the idea much more than the actual work and preparation of making the dough the night before, then waking up early to proof, assemble and bake the sticky pans.  That’s a lot of work for a weekend.

Here’s a way to have the same freshly baked sticky bun experience without all of the work and preparation. A marshmallow is dipped in butter, then cinnamon and sugar, wrapped in crescent roll dough, then dipped in more butter,  cinnamon and sugar.  The magic happens in the oven when the marshmallow magically disappears, melting with the cinnamon and sugar and creating the gooey sauce that makes a sticky bun so good.  Drizzle generously with cream cheese glaze, top with toasted pecans, and you are done.  Freshly baked pecan sticky buns in less than an hour and you did not have to wake up early.

My mom first remembers making these when she was in the 3rd grade and they would often have them for breakfast on the weekends or for holidays. She had no idea where the recipe came from but after a little research, I found a variation of this recipe won the Pillsbury Bake-Off in 1969 and has remained popular ever since.
